Protein Caesar Salad

Boost your protein intake with this Caesar Salad featuring smoked tofu, red beans, gem lettuce, and hemp seeds, topped with a creamy Caesar dressing.

Ingredients
2 packs smoked tofu
2 tins red beans
2 tablespoons tamari
2 tablespoons olive oil
2 large pinches of cayenne
pepper
300 g gem lettuce
2 tablespoons hemp seeds

Caesar dressing
60 g olive oil
40 g white balsamic vinegar
80 g water
2 tablespoons sunflower
seeds
1 teaspoon light miso paste
1/4 teaspoon dried garlic or 1 roasted garlic clove
1/2 teaspoon salt

Directions
Pre-heat the oven to 160°C with fan or 180°C without fan.
1. Cut the tofu in 1.5 cm cubes and combine with beans, tamari, oil and cayenne.
Gently mix until well coated. Transfer to a tray lined with baking paper and roast
for 10-15 minutes until golden. Set aside.
2. In the meantime, using a blender mix all the dressing ingredients until you get a
creamy sauce. You can also do it with a whisk.
3. Clean and pat dry the gem lettuce, then cut lengthwise into 4 or 6 wedges.
4. In a flat serving bowl, add gem lettuce, tofu & beans. Drizzle with caesar
dressing and season with more lemon juice and salt if necessary. Garnish with
hemp seeds.
