Baked Berry Breakfast Bowl

This breakfast bowl is sure to warm you during a cold winter morning! It can be made with any frozen berries, and is a great breakfast for sharing with friends over brunch. 

Ingredients

serves 4

Ingredients to be baked:
2 apples
140 g oats
140 ml hot water
140 g frozen mixed berries
60 g maple syrup
40 g tahini or any other nut butters
1 tablespoon melted coconut oil or olive oil
1/2 teaspoon cinnamon powder
Ingredients for the compote:
300 g mixed berries
80 ml water
1 tablespoon birnel
20 g chia seeds 
Topping:
80 g brown almonds

Directions


Pre-heat the oven at 200C degrees without a fan.
Mix all the ingredients to be baked together and leave to soak for 10 minutes. On a baking tray, lined with baking paper, spread out the mixture evenly and bake at 200 C for 15-20 minutes until golden but still soft inside.
In the meantime, combine all the ingredients for to compote in a small sauce pan and heat to medium heat. Cook and allow the berry compote to get thicker, about 10 minutes.
Once it's baked, transfer to 4 breakfast bowls and top up with the compote and the toasted almonds. We prefer it warm, but it is also great the next day cold.
