We’ve been enjoying this salad at the office on repeat. It’s super creamy, refreshing, and packed with protein thanks to the cashews and tofu .

Ingredients (serves 3-4):
- 150 grams salad greens (e.g., arugula)
- 100 grams mung bean sprouts
- 1 bell pepper
- 1 avocado
- 100 grams smoked tofu
- 1 nori sheet
- 1 spring onion
- Cilantro for topping
Dressing:
- 50 grams cashews
- 200 ml water
- 20 grams cilantro
- ½ teaspoon garlic powder
- Juice of ½ lime
Directions:
- Thinly slice the bell pepper and spring onion.
- Then, cube the tofu and avocado.
- In a bowl, combine the salad greens, bell pepper, spring onion, mung bean sprouts, smoked tofu, avocado, and chopped nori sheet.
- Prepare the dressing by blending the ingredients in a blender.
- Pour the dressing over the salad and toss until well coated.
- Top with additional nori sheets and cilantro when serving.
