Herby Cashew Protein Dressing

Ingredients:

½ cup cashew nuts (if you like soaked for 2–4 hours or use hot water to soak for 20 min if short on time)

1–2 tbsp Eat by Alex protein powder (based on desired protein content and consistency)

½ lemon, juiced

A handful of fresh herbs – basil, parsley, dill (mix to your liking)

1 tbsp salt (adjust to taste)

1–2 tbsp olive oil

Freshly ground pepper, to taste

¼–½ cup water (add more as needed for your preferred consistency)

 

Directions:

Blend and add to a salad of your choice!
