Cold Cucumber Soup

This chilled soup is perfect for hot days, offering hydration, vitamins, and a cool snack while also being low in calories and rich in nutrients.

Ingredients

  • 2 cucumbers
  • 300ml water
  • 35g baby spinach
  • 65g white almonds
  • 2 tablespoons white
  • balsamic vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt or
  • more to taste
  • Black pepper to taste
  • 1 bunch dill (20g)
  • 1/2 bunch mint (10g)
  • 1 spring onion


Directions

  1. Start by preparing all the ingredients.
  2. Rinse and peel the cucumber. Then chop in chunks.
  3. In two batches, blend half the ingredients. Combine in a large jar and blend for 90 seconds until super smooth. If you want to consume the soup immediately, use 200ml water and 100g ice cubes. Adjust with more water, salt & vinegar if necessary.
  4. Store in fridge and stir well before serving. It will naturally split.
