This chilled soup is perfect for hot days, offering hydration, vitamins, and a cool snack while also being low in calories and rich in nutrients.

Ingredients
- 2 cucumbers
- 300ml water
- 35g baby spinach
- 65g white almonds
- 2 tablespoons white
- balsamic vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon salt or
- more to taste
- Black pepper to taste
- 1 bunch dill (20g)
- 1/2 bunch mint (10g)
- 1 spring onion
Directions
- Start by preparing all the ingredients.
- Rinse and peel the cucumber. Then chop in chunks.
- In two batches, blend half the ingredients. Combine in a large jar and blend for 90 seconds until super smooth. If you want to consume the soup immediately, use 200ml water and 100g ice cubes. Adjust with more water, salt & vinegar if necessary.
- Store in fridge and stir well before serving. It will naturally split.
