Valentines Chocolate Cake

Valentine’s Day is coming up, and you know what they say: love goes through the stomach! 


Make this decadent but healthy chocolate cake for your lover, friend, or just for yourself.


Even more exciting, this cake includes the adaptogens reishi and maca powder from our Cosmic Cacao Blend, enhancing its fertility and brain-boosting qualities :)

 

Ingredients

  • 250 g spelt flour (gf option: gluten-free flour)

  • 90 g cocoa powder
  • 60 ml cosmic cacao
  • 240 ml unsweetened applesauce
  • 120 ml maple syrup
  • 60 g coconut sugar
  • 240 ml coconut milk
  • 175 g dark chocolate chips (>75%)
  • 10 g baking powder
  • 2.5 g salt

For the chocolate sauce

  • 100 g melted dark chocolate 

  • 15 g cosmic cacao (optional, for extra flavour)

For the garnish

  • Dried flower petals 
  • Cacao nibs

 

Directions

  1. Preheat your oven to 175°C. Grease a heart shaped cake pan with cooking spray or oil.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, Cosmic Cacao Blend,, baking powder, and salt until well combined.
  3. In another bowl, combine the unsweetened applesauce, maple syrup, coconut sugar and coconut milk. 
  4. Add the wet ingredients to the dry ingredients, stirring until combined. Fold in the chocolate chips.
  5. Pour the batter into the prepared  cake pan, spreading it evenly. Tap the pan gently on the counter to release any air bubbles.
  6. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the chocolate sauce. In a heatproof bowl, melt the dark chocolate au bain marie. Stir in the cosmic cacao (if using) until smooth and well combined. Set aside to cool slightly.
  8. Once the cake is baked, remove it from the oven and let it cool in the pan for about 10 minutes.
  9. Once the cake has cooled, drizzle the melted chocolate sauce over the top of the cake.
  10. Sprinkle the dried flower petals cacao nibs over the chocolate sauce.
  11. Enjoy!
