Jalapeño & Coriander Hummus

This is THE most delicious hummus with a bit of spice! Perfect for your summer picnics. Hope you enjoy!

 

Ingredients for 1 large portion

2 jars cooked chickpeas (keep the aquafaba)

1 spring onion - chopped

1 handful baby spinach

1 jalapeño or 1/2 teaspoon dried serrano peppers or more to taste

1 bunch coriander + keep some leaves to decorate

3 tablespoons of lemon juice or more to taste

4 tablespoons tahini

1 teaspoon salt

 

To garnish:

olive oil

sesame or sunflower seeds

coriander leaves

 

Directions

If you use dried Serrano peppers, first soak them in a little warm water - discard soaking water. Then in a blender add liquids first, then one chickpea jar with its aquafaba and one without aquafaba. Add the other ingredients and blend until super smooth. Taste and add salt and more lemon juice to your liking.

Before eating, drizzle with olive oil and decorate with coriander leaves and seeds.
