Asian Inspired Salad

We’ve been enjoying this salad at the office on repeat. It’s super creamy, refreshing, and packed with protein thanks to the cashews and tofu .

Ingredients (serves 3-4):

  • 150 grams salad greens (e.g., arugula)
  • 100 grams mung bean sprouts
  • 1 bell pepper
  • 1 avocado
  • 100 grams smoked tofu
  • 1 nori sheet
  • 1 spring onion
  • Cilantro for topping


  • 50 grams cashews
  • 200 ml water
  • 20 grams cilantro
  • ½ teaspoon garlic powder
  • Juice of ½ lime


  • Thinly slice the bell pepper and spring onion.
  • Then, cube the tofu and avocado.
  • In a bowl, combine the salad greens, bell pepper, spring onion, mung bean sprouts, smoked tofu, avocado, and chopped nori sheet.
  • Prepare the dressing by blending the ingredients in a blender.
  • Pour the dressing over the salad and toss until well coated.
  • Top with additional nori sheets and cilantro when serving.
